Produce Description:
Cashew nuts are the kidney-shaped seeds that develop on the bottom of the pseudocarp or ‘false fruit’. The false fruit is commonly called the cashew apple or the fruit of the cashew tree (Anacardium occidentale, native to Brazil but widely cultivated in tropical regions, including Nigeria). The real fruit is a kidney-shaped drupe that grows at the end of the apple. Inside this true fruit (the raw cashew nut) is the soft white kernel. The cashew shell contains a caustic phenolic resin that is harmful to humans. The resin is known under the name cashew nut shell liquid, or CNSL, and has widespread industrial uses.
Unlike cocoa beans that ferment in their mucilaginous pulp, cashew nuts undergo post-harvest processing involving sun-drying, roasting, shelling, and peeling to remove the thin brown skin (testa). This process brings out their distinct aroma, crunchy texture, and rich, mildly sweet flavor. Locally processed Nigerian cashews are often praised for their plumpness and buttery richness, making them a valuable export commodity and a nutritious snack high in healthy fats, protein, and minerals like magnesium and zinc.
